Preheat oven to 400°F (200°C).
In a bowl, whisk honey, mustard, 1 tablespoon olive oil, lemon zest, garlic, thyme, salt, and pepper. Reserve 3 tablespoons of the sauce.
Coat salmon fillets with the remaining honey mustard mixture and set aside.
Spray a large sheet pan with cooking spray. Add potatoes and toss with reserved sauce. Arrange cut-side down.
Bake potatoes for 15 minutes.
Remove pan, push potatoes to one side. Add broccoli to the other side.
Drizzle broccoli with remaining olive oil and sprinkle with salt.
Place salmon in the center of the pan.
Bake for 8–13 minutes until the salmon flakes easily.
