Sheet Pan Honey Mustard Salmon

A quick sheet pan dinner with salmon, potatoes, and broccoli.
Coated in a sweet and tangy honey mustard sauce.
Ready in under 40 minutes with minimal cleanup.

Ingredients
  

  • ¼ cup pure honey
  • 3 tablespoons whole grain mustard
  • 1 ½ tablespoons olive oil divided
  • Zest of 1 lemon 1–2 teaspoons
  • 1 –2 garlic cloves finely minced (2 teaspoons)
  • ½ teaspoon dried thyme
  • ½ teaspoon fine salt plus more to taste
  • ¼ teaspoon black pepper
  • 4 salmon fillets 4–5 oz each
  • Cooking spray
  • 1 large head broccoli cut into florets
  • 1 lb small red or yellow potatoes

Instructions
 

  • Preheat oven to 400°F (200°C).
  • In a bowl, whisk honey, mustard, 1 tablespoon olive oil, lemon zest, garlic, thyme, salt, and pepper. Reserve 3 tablespoons of the sauce.
  • Coat salmon fillets with the remaining honey mustard mixture and set aside.
  • Spray a large sheet pan with cooking spray. Add potatoes and toss with reserved sauce. Arrange cut-side down.
  • Bake potatoes for 15 minutes.
  • Remove pan, push potatoes to one side. Add broccoli to the other side.
  • Drizzle broccoli with remaining olive oil and sprinkle with salt.
  • Place salmon in the center of the pan.
  • Bake for 8–13 minutes until the salmon flakes easily.
  • Serve your Sheet Pan Honey Mustard Salmon with fresh lemon wedges.

Notes

  • Substitute broccoli with asparagus or zucchini if desired.
  • Add a sprinkle of chili flakes for a spicy kick.
  • Serve with rice or quinoa for a heartier meal.
