Ingredients
  

For the Lobster

  • 4 lobster tails 5–6 ounces each
  • 1 tablespoon fresh parsley finely chopped
  • 2 garlic cloves pressed
  • 1 teaspoon Dijon mustard
  • ¼ teaspoon fine sea salt
  • teaspoon freshly ground black pepper
  • tablespoons olive oil
  • tablespoons fresh lemon juice
  • 4 tablespoons unsalted butter divided
  • Extra chopped parsley for garnish

Instructions
 

Prepare the Lobster Tails

  • Using kitchen scissors, cut through the top shell of each lobster tail lengthwise, stopping before the tail fin.
  • Flip the lobster over and gently press to crack the ribs underneath.
  • Carefully separate the shell and loosen the meat while keeping it attached at the base.
  • Lift the lobster meat over the shell and rest it on top to create a beautiful butterfly presentation.

Prepare the Garlic Butter Marinade

  • In a small bowl, combine the parsley, garlic, Dijon mustard, salt, black pepper, olive oil, and fresh lemon juice.
  • Mix until well combined.
  • Broil the Lobster
  • Preheat the oven to high broil.
  • Position the oven rack so the lobster sits about 6 inches below the broiler.
  • Arrange the butterflied lobster tails in a baking dish.
  • Spoon the garlic mixture evenly over each lobster tail.
  • Top each tail with small pieces of butter.
  • Broil for 10–11 minutes, or until the lobster meat is opaque and reaches an internal temperature of 145°F (63°C).

Make the Garlic Lemon Butter

  • Carefully pour the pan juices into a small saucepan.
  • Add the remaining butter.
  • Heat gently until melted and slightly simmering.
  • Spoon the warm garlic lemon butter over the lobster tails or serve it in small bowls for dipping.

Notes

  • Add a pinch of smoked paprika for extra color.
  • Fresh thyme or chives make excellent garnishes.
  • Pair with mashed potatoes, asparagus, roasted vegetables, or rice pilaf.
  • Lemon wedges make a beautiful finishing touch.
