Ingredients
  

  • 2 9 oz / 250g chicken breasts
  • 1/4 cup 40g all-purpose flour
  • 1/2 cup 120ml chicken stock
  • 6 tbsp 90g unsalted butter, divided
  • 2 cloves garlic minced
  • 1 tbsp fresh parsley finely diced
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 lemon cut into wedges

Instructions
 

  • In a shallow dish, mix flour, garlic powder, salt, and black pepper.
  • Butterfly the chicken breasts to create 4 even pieces. Coat each piece thoroughly in the flour mixture.
  • Heat 1 tbsp butter and olive oil in a large pan over medium-high heat.
  • Cook chicken for 3–5 minutes per side until golden and fully cooked. Remove and set aside.
  • Reduce heat to medium and add garlic. Sauté for 1–2 minutes until lightly golden.
  • Pour in chicken stock and scrape up any browned bits from the pan.
  • Add remaining butter and whisk until melted and combined into a smooth sauce.
  • Stir in parsley and season to taste.
  • Let the sauce simmer until slightly thickened.
  • Return chicken to the pan, spoon sauce over, and cook briefly on low heat.
  • Serve with extra sauce and a squeeze of lemon juice.
