In a medium bowl, whisk together the cornstarch and cold water until smooth.
Add the chicken broth, soy sauce, honey, toasted sesame oil, and crushed red pepper flakes. Whisk until fully combined and set aside.
Heat 1 tablespoon of olive oil in a large skillet or wok over medium-high heat.
Season the chicken with salt and pepper. Cook for 3–5 minutes, working in batches if needed, until fully cooked. Remove from the skillet.
Reduce the heat to medium and add the remaining tablespoon of olive oil.
Add the broccoli, bell peppers, and carrots. Stir-fry for about 4–5 minutes until the vegetables are crisp-tender.
Stir in the ginger and garlic, cooking for another minute until fragrant.
Return the cooked chicken to the skillet and mix everything together.
Whisk the sauce once more and pour it over the chicken and vegetables. Stir gently until everything is evenly coated.
Bring the Chicken Stir Fry to a gentle boil and cook for about one minute until the sauce thickens.
Serve immediately over steamed rice or chow mein noodles.
