Chicken Stir Fry Recipe

Ingredients
  

  • 2 tablespoons olive oil or avocado oil divided
  • 1 lb boneless skinless chicken breasts cut into thin strips
  • ¼ teaspoon fine salt
  • teaspoon black pepper
  • 2 bell peppers sliced (1 red, 1 yellow)
  • 1 cup snap peas or snow peas
  • 3 green onions sliced (white and green parts separated)
  • Optional: cooked rice sesame seeds

For the Stir-Fry Sauce:

  • ½ cup coconut aminos
  • 2 tablespoons toasted sesame oil
  • 2 tablespoons tomato paste
  • 1 tablespoon honey
  • 2 garlic cloves minced
  • 1 teaspoon grated fresh ginger
  • ¼ teaspoon crushed red pepper flakes
  • ¼ teaspoon black pepper

Instructions
 

  • Heat 1 tablespoon oil in a large skillet over medium-high heat. Add chicken, season with salt and pepper, and cook until browned and fully cooked. Remove and set aside.
  • Add remaining oil to the skillet. Cook bell peppers, peas, and white parts of green onion for 4–5 minutes until tender-crisp.
  • In a bowl, whisk together all sauce ingredients.
  • Return chicken to the skillet. Pour sauce over and toss well. Bring to a boil, then reduce heat and simmer until slightly thickened.
  • Serve the Chicken Stir Fry Recipe over rice if desired and garnish with green onions and sesame seeds.

Notes

  • Serve with brown rice, white rice, or noodles
  • Add chili sauce for extra heat
  • Substitute honey with maple syrup if needed
