Heat 1 tablespoon oil in a large skillet over medium-high heat. Add chicken, season with salt and pepper, and cook until browned and fully cooked. Remove and set aside.
Add remaining oil to the skillet. Cook bell peppers, peas, and white parts of green onion for 4–5 minutes until tender-crisp.
In a bowl, whisk together all sauce ingredients.
Return chicken to the skillet. Pour sauce over and toss well. Bring to a boil, then reduce heat and simmer until slightly thickened.
