Air Fryer Zucchini Chips are a healthy, crispy snack made with fresh zucchini, olive oil, garlic powder, and simple seasonings. They're low carb, gluten-free, and ready in under 30 minutes.

Ingredients
  

  • 1 large zucchini thinly sliced (about 1/8-inch thick)
  • Kosher salt
  • 2 tablespoons extra virgin olive oil
  • 1/2 –1 teaspoon garlic powder

Instructions
 

  • Slice the zucchini into thin, even rounds, approximately 1/8-inch thick.
  • Arrange the slices in a single layer on paper towels.
  • Sprinkle generously with kosher salt and let sit for 5–10 minutes to draw out excess moisture.
  • Pat the zucchini slices completely dry using paper towels.
  • Place the zucchini into a large mixing bowl.
  • Drizzle with olive oil and sprinkle with garlic powder.
  • Toss gently until every slice is evenly coated.
  • Arrange the slices in a single layer inside the air fryer basket or trays without overlapping.
  • Cook the Air Fryer Zucchini Chips at 400°F (200°C) for 15–20 minutes.
  • Begin checking after 10 minutes and remove chips that are golden brown and crispy around the edges.
  • Continue cooking the remaining slices until all are crisp.
  • Transfer the chips to a wire rack and allow them to cool for several minutes before serving for maximum crispiness.

Notes

  • Fresh zucchini works best for the crispiest texture.
  • Store completely cooled chips to maintain crunch.
  • Enjoy with ranch dip, garlic aioli, hummus, or Greek yogurt dip.
  • For extra crispiness, cook in smaller batches.
