Slice the zucchini into thin, even rounds, approximately 1/8-inch thick.
Arrange the slices in a single layer on paper towels.
Sprinkle generously with kosher salt and let sit for 5–10 minutes to draw out excess moisture.
Pat the zucchini slices completely dry using paper towels.
Place the zucchini into a large mixing bowl.
Drizzle with olive oil and sprinkle with garlic powder.
Toss gently until every slice is evenly coated.
Arrange the slices in a single layer inside the air fryer basket or trays without overlapping.
