Heat about 2 inches of oil in a saucepan to 350°F (177°C).
In a bowl, mix shredded cheese and egg whites until a soft dough forms.
Scoop about 1.5 tablespoons of dough and roll into balls.
Place balls on parchment paper.
Fry a few at a time until golden and crispy (3–4 minutes).
Remove and drain on paper towels.
Lightly season and serve warm.
