Ingredients

  • 1 cup shredded zucchini well drained
  • 1 garlic clove finely grated
  • 1/3 cup breadcrumbs
  • 1/4 cup grated Parmigiano-Reggiano cheese
  • 1 large egg
  • 2 tablespoons chopped fresh chives
  • 1 tablespoon chopped fresh parsley
  • 1 teaspoon chopped fresh basil
  • 1 teaspoon chopped fresh oregano
  • Pinch of salt
  • Pinch of black pepper
  • Olive oil or nonstick cooking spray for the pan
  • Marinara sauce for dipping

Instructions

  • Preheat the oven to 400°F (204°C). Lightly grease a baking sheet with olive oil or nonstick cooking spray.
  • Grate the zucchini using a box grater and transfer it to the center of a clean kitchen towel.
  • Gather the towel around the zucchini and twist firmly over the sink to remove as much excess liquid as possible. This is important for achieving firm, golden bites.
  • Finely grate the garlic.
  • Place the drained zucchini in a medium mixing bowl. Add the garlic, breadcrumbs, Parmesan, egg, chives, parsley, basil, oregano, salt, and black pepper.
  • Mix thoroughly until the ingredients are evenly distributed and the mixture holds together when pressed.
  • Scoop approximately 1 tablespoon of the mixture into your hands and gently shape it into a compact ball or slightly flattened bite.
  • Arrange the Zucchini Garlic Bites on the prepared baking sheet, leaving a little space between each one.
  • Bake for 15–18 minutes, or until the bites are set and golden around the edges. For more even browning, carefully turn them during the final few minutes if needed.
  • Allow them to cool on the pan for a few minutes before serving.
  • Serve warm with marinara sauce for dipping.

Notes

Regular breadcrumbs, Italian-seasoned breadcrumbs, or panko can be used. Panko will generally give the bites a slightly lighter texture.
For extra cheesy zucchini bites, sprinkle a small amount of Parmesan over each portion before baking.
A pinch of crushed red pepper can be added for gentle heat.
