Cube the watermelon and remove any remaining seeds.
Place the watermelon cubes into a blender.
Add the fresh lime juice, honey or agave syrup, water, and a pinch of salt.
Blend until completely smooth, about 1–2 minutes.
Taste the mixture and adjust sweetness or acidity as desired by adding more honey or lime juice.
Pour the mixture into a shallow dish or freezer-safe container.
Cover and freeze for approximately 4 hours, or until completely solid.
Remove from the freezer and allow the Watermelon Sorbet with Lime to sit at room temperature for 10–15 minutes.
Scoop into bowls or cones and serve immediately.
