Watermelon Feta Mint Skewers with Balsamic Glaze

Watermelon Feta Mint Skewers are an easy 20-minute summer appetizer.Layer watermelon with feta and fresh mint on individual toothpicks.Finish each bite with a sweet and tangy balsamic glaze.

Ingredients
  

  • 4 cups watermelon cut into 24 1-inch (2.5 cm) cubes
  • 4 ounces feta cheese cut into 24 cubes
  • 24 fresh mint leaves
  • ½ cup high-quality balsamic vinegar
  • 2 tablespoons brown sugar or granulated sugar
  • 24 toothpicks

Instructions
 

  • Arrange the watermelon cubes in a single layer on a serving platter.
  • Place one cube of feta on top of each piece of watermelon.
  • Fold a fresh mint leaf and carefully thread it onto a toothpick.
  • Push the toothpick through the feta and then into the watermelon. Repeat until all 24 skewers are assembled.
  • To prepare the balsamic glaze, combine the balsamic vinegar and sugar in a small saucepan.
  • Heat over medium-high heat until the mixture begins to simmer.
  • Reduce the heat as necessary to maintain a steady simmer and cook for approximately 5 minutes, stirring continuously, until the mixture has reduced by nearly half.
  • Remove the glaze from the heat and allow it to cool for 1–2 minutes. Do not leave it too long before using, as it will continue thickening as it cools.
  • Spoon or lightly drizzle a small amount of balsamic glaze over each of the Watermelon Feta Mint Skewers.
  • Serve immediately while the watermelon is fresh and juicy.

Notes

For strict halal preparation, check the feta and balsamic vinegar labels. Choose feta produced with microbial or halal-certified enzymes and a suitable alcohol-free or halal-certified balsamic vinegar when required.
You can substitute fresh basil for mint for a slightly different herbal flavor.
For additional color, add a small piece of cucumber to each skewer. Cherry tomatoes can also complement the feta and balsamic flavors.
Keep the assembled skewers refrigerated until close to serving time, but add the balsamic glaze just before serving for the freshest appearance.
