Vegetarian Air Fryer Stuffed Peppers

Vegetarian Air Fryer Stuffed Peppers are filled with lentils, rice, vegetables, and cheese. They're healthy, easy to make, and ready in just 35 minutes. Perfect for a satisfying weeknight vegetarian dinner.

Ingredients
  

  • 4 medium bell peppers any color
  • 1 can 425g lentils, rinsed and drained
  • 1 tablespoon Italian seasoning
  • Red pepper flakes to taste (optional)
  • 1 cup cooked rice
  • 1 cup tomato sauce
  • 1 cup corn kernels fresh, frozen, or canned
  • ½ cup chopped tomatoes
  • ½ cup diced zucchini
  • ½ cup shredded cheese
  • Extra cheese for topping
  • 1 handful chopped spinach
  • 1 tablespoon olive oil
  • Sour cream salsa, and salad for serving (optional)

Instructions
 

  • Preheat your air fryer to 400°F (200°C).
  • Wash the bell peppers and carefully cut off the tops. Remove the seeds and membranes.
  • Heat the olive oil in a medium skillet over medium heat.
  • Add the lentils, cooked rice, Italian seasoning, red pepper flakes (if using), tomato sauce, corn, chopped tomatoes, and zucchini. Stir well to combine.
  • Cover and cook for 8–10 minutes, stirring occasionally, until the zucchini is tender and the filling is heated through.
  • Stir in the shredded cheese and chopped spinach. Cook for another 2–3 minutes until the cheese melts and the spinach wilts.
  • Spoon the filling into each bell pepper until full. Sprinkle extra cheese over the tops.
  • Arrange the stuffed peppers upright in the air fryer basket.
  • Air fry the Vegetarian Air Fryer Stuffed Peppers for 10–15 minutes, or until the peppers are tender and the cheese is melted and lightly golden.
  • Serve immediately with sour cream, salsa, and a fresh side salad if desired.

Notes

  • Brown rice, quinoa, or cauliflower rice can be substituted for white rice.
  • Swap lentils with black beans or chickpeas for a different flavor.
  • For a spicier version, increase the red pepper flakes or add diced jalapeños.
  • Sprinkle grated Parmesan over the finished peppers for even more flavor.
  • Pair with garlic bread, roasted vegetables, or a simple green salad for a complete meal.
