Ingredients
  

  • 2 tablespoons extra virgin olive oil
  • 4 medium carrots peeled and sliced
  • 3 parsnips peeled and sliced
  • 3 celery ribs sliced
  • 1/2 medium onion diced
  • 1 leek halved lengthwise, sliced, and rinsed
  • 4 garlic cloves minced
  • 1 teaspoon kosher salt
  • 1/2 teaspoon freshly ground black pepper
  • 2 boneless skinless chicken breasts
  • 2 sprigs fresh thyme
  • 2 sprigs fresh tarragon
  • 1 bay leaf
  • 5 cups low-sodium chicken broth
  • 1/4 cup roughly chopped fresh parsley

Instructions
 

Saute the Vegetables

  • Heat the olive oil in a large soup pot over medium heat. Add the carrots, parsnips, celery, leek, and onion. Cook for 4 to 5 minutes, stirring frequently until the vegetables begin to soften.
  • Add the garlic, kosher salt, and black pepper. Stir for another minute until fragrant.

Poach the Chicken

  • Add the thyme sprigs, tarragon sprigs, bay leaf, chicken breasts, and chicken broth to the pot. Bring everything to a gentle boil.
  • Reduce the heat to low, cover the pot, and simmer for 15 minutes or until the chicken is fully cooked.

Shred the Chicken

  • Use tongs to transfer the chicken breasts to a cutting board. Shred the chicken using two forks.
  • Return the shredded chicken to the pot and simmer for another 1 to 2 minutes.

Serve

  • Remove the thyme sprigs, tarragon sprigs, and bay leaf. Stir in the fresh parsley.
  • Serve the Ultimate Chicken Soup hot with extra parsley and freshly cracked black pepper.

Notes

  • Swap parsnips with potatoes or sweet potatoes if preferred.
  • Rotisserie chicken can save time.
  • Add spinach or kale during the last few minutes for extra greens.
