Sweet Potato Burger Bowl with Ground Beef

A sweet potato burger bowl combines roasted sweet potatoes, seasoned ground beef, crisp lettuce, tomatoes, red onion, and pickles.
Roast the sweet potatoes at 400°F for 30–40 minutes while browning the ground beef on the stovetop.
Assemble everything in bowls and customize with your favorite burger toppings and sauce.

Ingredients
  

  • 1 lb lean ground beef
  • 4 small sweet potatoes
  • 1 –2 tablespoons avocado oil
  • 1 teaspoon garlic powder
  • 1 –2 tablespoons halal-friendly Worcestershire sauce
  • Salt to taste
  • Black pepper to taste
  • Shredded lettuce
  • Red onion thinly sliced
  • Diced tomatoes
  • Pickles sliced

Instructions
 

  • Preheat the oven to 400°F (200°C).
  • Peel the sweet potatoes and cut them into small, evenly sized cubes.
  • Place the sweet potatoes in a large bowl. Toss with avocado oil, garlic powder, salt, and black pepper until evenly coated.
  • Spread the sweet potatoes in a single layer on a baking sheet. Roast for 30–40 minutes, stirring halfway through, until tender inside and lightly browned around the edges.
  • While the sweet potatoes roast, heat a skillet over medium heat. Add the lean ground beef and cook for about 8 minutes, breaking it apart with a spatula, until browned and fully cooked.
  • Stir the Worcestershire sauce into the beef and season with additional garlic powder, salt, or black pepper if desired.
  • Prepare the toppings by shredding the lettuce, slicing the red onion and pickles, and dicing the tomatoes.
  • To assemble the sweet potato burger bowl, start with a layer of shredded lettuce, then add roasted sweet potatoes and seasoned ground beef.
  • Finish with tomatoes, red onion, pickles, and any additional burger-inspired toppings you enjoy.
  • Serve immediately while the sweet potatoes and beef are warm.

Notes

For a lower-carb option, reduce the amount of sweet potato and increase the lettuce and fresh vegetables.
You can also add shredded cheddar cheese, avocado, jalapeños, cucumber, or a homemade burger sauce. For meal prep, keep the warm ingredients and fresh toppings in separate containers until ready to serve.
