  • 1 pound shrimp peeled and deveined

  • 2 tablespoons soy sauce
  • 2 cloves garlic minced
  • 1 teaspoon fresh ginger grated

For the Pineapple

  • 1 cup pineapple chunks fresh or well-drained canned

For Cooking

  • 2 tablespoons olive oil
  • 1 tablespoon fresh lime juice optional
  • ½ teaspoon red pepper flakes optional

Instructions
 

  • In a medium bowl, whisk together the sweet chili sauce, soy sauce, garlic, and grated ginger.
  • Add the shrimp and toss until evenly coated. Cover and refrigerate for 15–30 minutes.
  • While the shrimp marinates, cut fresh pineapple into bite-sized chunks or drain canned pineapple thoroughly.
  • Heat olive oil in a large skillet over medium-high heat.
  • Add the marinated shrimp in a single layer and cook for 2–3 minutes per side until pink and opaque.
  • Stir in the pineapple chunks and cook for another 2–3 minutes until warmed through and lightly caramelized.
  • Add lime juice and red pepper flakes if desired, then gently toss everything together.
