Stuffed Sweet Potatoes with Beef & Cheese
Stuffed Sweet Potatoes are filled with seasoned beef tomatoes and melted cheese

medium sweet potatoes

olive oil

small red onion
diced

yellow bell pepper
diced

garlic

grass-fed ground beef

canned diced tomatoes with juices
Salt and pepper to taste
1
tsp
dried oregano
1
tsp
dried basil
1
cup
shredded mozzarella and cheddar cheese
2
green onions
thinly sliced
Instructions
Pierce the sweet potatoes with a fork and microwave for 8–10 minutes. Flip and microwave another 8–10 minutes until tender.
Heat olive oil in a skillet over medium-high heat.
Sauté onion, bell pepper, and garlic for 3–5 minutes until softened.
Add ground beef and cook until browned, breaking it apart as it cooks.
Stir in diced tomatoes, salt, pepper, oregano, and basil. Cook for 1–2 minutes.
Mix in 3/4 cup of the cheese until melted.
Slice sweet potatoes in half and fluff the insides with a fork.
Fill each potato with the beef mixture to make Stuffed Sweet Potatoes.
Top with remaining cheese and green onions.
Serve warm and enjoy
Notes
Add black beans or corn for extra texture
Serve with a fresh green salad
Drizzle with tahini sauce for a twist
