Strawberry Oatmeal Bars No Bake Recipe

Easy no-bake Strawberry Oatmeal Bars made with oats, almond butter, and homemade strawberry jam.

Ingredients
  

Oat Base & Crumble

  • 1 cup oat flour
  • 1 cup rolled oats
  • 1/3 cup almond butter
  • 1 tbsp coconut oil
  • 3 tbsp honey or maple syrup

Strawberry Jam Layer

  • 1 cup strawberries
  • 1 tbsp jaggery powder or sugar
  • Splash of water

Instructions
 

  • In a large mixing bowl, combine the oat flour, rolled oats, almond butter, coconut oil, and honey or maple syrup.
  • Mix until a crumbly texture forms and all ingredients are evenly incorporated.
  • Line a square container or pan with parchment paper.
  • Press most of the oat mixture firmly into the bottom of the prepared pan to create the base. Reserve about 1/3 cup of the mixture for the topping.
  • In a small saucepan, add strawberries, jaggery powder, and a splash of water.
  • Cook over medium heat, stirring occasionally, until the strawberries break down and the mixture thickens into a jam-like consistency.
  • Remove from heat and allow the strawberry filling to cool completely.
  • Spread the cooled strawberry jam evenly over the oat base.
  • Sprinkle the reserved oat crumble mixture over the jam layer.
  • Refrigerate the Strawberry Oatmeal Bars for at least 2 hours or until firm.
  • Slice into bars and serve chilled.

Notes

  • Serve chilled for the best texture.
  • Add chia seeds to the strawberry layer for a thicker jam.
  • Drizzle with melted dark chocolate for a more indulgent treat.
  • Enjoy with coffee, tea, or as an afternoon snack.
