In a large mixing bowl, combine the oat flour, rolled oats, almond butter, coconut oil, and honey or maple syrup.
Mix until a crumbly texture forms and all ingredients are evenly incorporated.
Line a square container or pan with parchment paper.
Press most of the oat mixture firmly into the bottom of the prepared pan to create the base. Reserve about 1/3 cup of the mixture for the topping.
In a small saucepan, add strawberries, jaggery powder, and a splash of water.
Cook over medium heat, stirring occasionally, until the strawberries break down and the mixture thickens into a jam-like consistency.
Remove from heat and allow the strawberry filling to cool completely.
Spread the cooled strawberry jam evenly over the oat base.
Sprinkle the reserved oat crumble mixture over the jam layer.
Refrigerate the Strawberry Oatmeal Bars for at least 2 hours or until firm.
Slice into bars and serve chilled.
