Wash and hull the strawberries.
Place the strawberries in a blender or food processor and blend until smooth.
For a smoother texture, strain the strawberry puree through a fine-mesh sieve to remove seeds.
In a small saucepan, combine the sugar and 2 cups of water.
Heat over medium heat and bring to a gentle boil, stirring occasionally until the sugar completely dissolves.
Remove the syrup from the heat and allow it to cool to room temperature.
Strain the fresh lemon juice through a fine-mesh sieve into a large pitcher.
Add the cooled simple syrup and strawberry puree to the pitcher. Stir until fully combined.
Refrigerate until chilled.
Before serving, add 2 1/2 cups of cold water and stir well.
