  • 1 cup cottage cheese
  • 8 strawberries quartered
  • ¼ cup old-fashioned rolled oats
  • 2 tablespoons unsweetened coconut flakes
  • 2 teaspoons maple syrup plus extra for topping
  • Pinch of cinnamon

Instructions
 

  • Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a small bowl, combine the strawberries, rolled oats, coconut flakes, maple syrup, and cinnamon.
  • Toss until everything is evenly coated.
  • Spread the mixture onto the prepared baking sheet in an even layer.
  • Bake for 30 minutes, stirring once halfway through cooking.
  • Remove from the oven and allow the roasted berry mixture to cool for about 5 minutes.
  • Place the cottage cheese into a serving bowl.
