Ingredients
  

Salad

  • 6 cups spinach or field greens
  • 1 cup sliced strawberries
  • 3/4 cup blueberries
  • 3/4 cup mandarin orange slices
  • 1/2 ripe avocado chopped
  • 1/4 cup sliced almonds
  • 8 ounces cooked chicken chopped or shredded

Homemade Poppy Seed Dressing

  • 1/3 cup Greek yogurt
  • 2 tablespoons apple cider vinegar
  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons honey
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground dry mustard or 1 teaspoon Dijon mustard
  • 1 1/2 teaspoons poppy seeds

Instructions
 

  • Add the spinach or field greens to a large serving bowl.
  • Top with sliced strawberries, blueberries, mandarin oranges, avocado, sliced almonds, and cooked chicken.
  • Gently toss the salad ingredients until evenly distributed.
  • In a small bowl or jar, whisk together the Greek yogurt, apple cider vinegar, olive oil, honey, salt, mustard, and poppy seeds until smooth.
  • Pour the desired amount of dressing over the Strawberry Chicken Salad.
  • Toss gently to coat all ingredients evenly.
  • Serve immediately and enjoy.
