Ingredients
  

For the Spice Rub

  • 2 teaspoons garlic powder
  • 2 teaspoons chili powder
  • 1 teaspoon salt
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • ¼ –½ teaspoon cayenne pepper adjust to taste
  • 8 boneless skinless chicken thighs

For the Honey Glaze

  • 6 tablespoons honey
  • 2 tablespoons apple cider vinegar

Instructions
 

  • Preheat your grill to medium-high heat or preheat the oven to 450°F (230°C).
  • In a small bowl, combine the garlic powder, chili powder, salt, cumin, paprika, and cayenne pepper.
  • Trim any excess fat from the chicken thighs using kitchen shears or a sharp knife.
  • Coat the chicken evenly with the spice mixture, pressing gently so the seasoning adheres.
  • Lightly oil the grill grates or prepare a baking sheet if using the oven.
  • Grill the chicken for about 5–7 minutes per side, or bake for 20–25 minutes, until the internal temperature reaches 165°F (74°C).
  • While the chicken cooks, whisk together the honey and apple cider vinegar until smooth.
  • During the final few minutes of cooking, brush the honey glaze generously over both sides of the chicken.
  • Reduce the grill heat slightly to prevent the honey from burning, allowing the glaze to caramelize.
  • If baking, switch the oven to broil for 1–2 minutes after glazing to create a beautifully caramelized finish.
  • Remove the Spicy Honey Chicken from the heat and let it rest for 5 minutes before serving.

Notes

  • Apple cider vinegar balances the sweetness of the honey glaze.
  • Serve with roasted vegetables, mashed potatoes, rice, or grilled corn.
  • Add crushed red pepper flakes for even more heat.
  • Double the glaze if you prefer extra sauce for serving.
