Preheat your grill to medium-high heat or preheat the oven to 450°F (230°C).
In a small bowl, combine the garlic powder, chili powder, salt, cumin, paprika, and cayenne pepper.
Trim any excess fat from the chicken thighs using kitchen shears or a sharp knife.
Coat the chicken evenly with the spice mixture, pressing gently so the seasoning adheres.
Lightly oil the grill grates or prepare a baking sheet if using the oven.
Grill the chicken for about 5–7 minutes per side, or bake for 20–25 minutes, until the internal temperature reaches 165°F (74°C).
While the chicken cooks, whisk together the honey and apple cider vinegar until smooth.
During the final few minutes of cooking, brush the honey glaze generously over both sides of the chicken.
Reduce the grill heat slightly to prevent the honey from burning, allowing the glaze to caramelize.
If baking, switch the oven to broil for 1–2 minutes after glazing to create a beautifully caramelized finish.
Remove the Spicy Honey Chicken from the heat and let it rest for 5 minutes before serving.
