Ingredients
  

For 3 servings:

  • 1 large potato
  • 8 ounces halal hot beef sausage
  • 1/2 medium green bell pepper chopped
  • 1/2 medium red bell pepper chopped
  • 2 tablespoons chopped onion
  • 1 cup black beans rinsed and drained
  • 2 tablespoons olive oil
  • 1/4 teaspoon salt plus more for the eggs
  • 1/4 teaspoon dried oregano
  • 1/4 teaspoon ground cumin
  • 1/4 teaspoon paprika
  • 1/4 teaspoon garlic powder
  • 6 large eggs
  • 3/4 cup shredded cheddar cheese plus more for topping
  • Black pepper to taste
  • 1/2 cup chopped tomato
  • 1/2 avocado sliced
  • 2 green onions chopped
  • 1 teaspoon butter

Instructions
 

Step 1: Prepare the potato

  • Wash the potato thoroughly and pierce it several times with a fork. Microwave for 3–4 minutes, or until it begins to soften.
  • Allow it to cool slightly, then peel and cut it into bite-sized cubes.

Step 2: Cook the beef sausage

  • Heat a large cast-iron skillet over medium heat.
  • Add the halal beef sausage and cook for approximately 6–8 minutes, breaking it into smaller pieces as it browns.
  • Continue cooking until the sausage is fully cooked and reaches an internal temperature of 160°F (71°C), or the temperature specified on its packaging.
  • Transfer the cooked sausage to a plate and carefully wipe out the skillet.

Step 3: Prepare the vegetables

  • Chop the green bell pepper, red bell pepper, and onion into small, even pieces.
  • Keeping the vegetables similar in size helps them cook evenly.

Step 4: Cook the potatoes and vegetables

  • Add the olive oil to the skillet and warm over medium heat.
  • Add the cubed potatoes, bell peppers, and onion.
  • Cook for approximately 8–10 minutes, stirring occasionally, until the potatoes develop golden, lightly crispy edges and the vegetables become tender.
  • Add a little more olive oil if necessary to prevent sticking.

Step 5: Add the black beans and seasonings

  • Stir the rinsed black beans into the potato mixture.
  • In a small bowl, combine the salt, oregano, cumin, paprika, and garlic powder.
  • Sprinkle the seasoning mixture over the vegetables and beans. Stir until everything is evenly coated.

Step 6: Return the sausage to the skillet

  • Add the cooked beef sausage back to the skillet and mix well.
  • Reduce the heat to low and keep the mixture warm while preparing the eggs.

Step 7: Prepare the fresh toppings

  • Chop the tomato, slice the avocado, and finely chop the green onions.
  • Set everything aside until you are ready to assemble the bowls.

Step 8: Make the cheesy scrambled eggs

  • Crack the eggs into a medium bowl.
  • Add the shredded cheddar cheese, a pinch of salt, and black pepper.
  • Whisk until the ingredients are well combined.
  • Melt the butter in a nonstick skillet over medium-low heat.
  • Pour in the egg mixture and cook gently, stirring occasionally, until the eggs are softly scrambled and fully set.

Step 9: Assemble the breakfast bowls

  • Divide the warm potato, black bean, and beef sausage mixture evenly among three serving bowls.
  • Top each portion with the cheesy scrambled eggs.
  • Finish with chopped tomatoes, sliced avocado, green onions, and additional shredded cheddar cheese if desired.
  • Serve your Southwest Breakfast Bowl immediately while the eggs are warm and the potatoes are still lightly crispy.

Notes

  • For a lighter breakfast, use reduced-fat cheddar cheese or replace some of the whole eggs with egg whites.
  • For a vegetarian variation, omit the beef sausage and increase the black beans or add sautéed mushrooms.
  • Sweet potatoes can replace regular potatoes for a naturally sweeter flavor.
  • Add fresh cilantro, salsa, or a squeeze of lime juice for a brighter finish.
  • Serve with warm tortillas, toasted bread, or a side of fresh fruit for a complete brunch.
  • For a dairy-free version, use plant-based cheese and replace the butter with olive oil.
