Soft & Thick Snickerdoodles are soft, chewy cookies rolled in cinnamon sugar.

Ingredients
  

  • 3 cups 375g all-purpose flour
  • 2 teaspoons cream of tartar
  • 1 teaspoon baking soda
  • 1 and 1/2 teaspoons ground cinnamon
  • 1/2 teaspoon salt
  • 1 cup 226g unsalted butter, softened
  • 1 and 1/3 cup 267g granulated sugar
  • 1 large egg
  • 1 large egg yolk
  • 2 teaspoons vanilla extract
  • Topping:
  • 1/3 cup 70g granulated sugar
  • 1 teaspoon ground cinnamon

Instructions
 

  • Preheat oven to 375°F (190°C) and line baking sheets with parchment paper.
  • In a bowl, whisk flour, cream of tartar, baking soda, cinnamon, and salt.
  • In another bowl, beat butter and sugar until creamy.
  • Add egg, egg yolk, and vanilla extract, mixing well.
  • Gradually mix dry ingredients into wet ingredients until a thick dough forms.
  • Mix topping ingredients in a small bowl.
  • Roll dough into balls and coat in cinnamon sugar.
  • Place on baking sheets and bake for 10 minutes.
  • Gently flatten cookies while warm and let cool completely.

Notes

  • Substitute part of the butter with margarine if needed.
  • Serve with milk or tea for a comforting treat.
  • Sprinkle extra cinnamon sugar after baking for a sweeter finish.
