Ingredients

For the Burritos

  • 1 pound ground beef
  • 4 –6 flour tortillas

For the Sauce

  • 2 –3 chipotle peppers in adobo sauce
  • 1 cup heavy cream
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt to taste
  • Black pepper to taste
  • Optional broth or water for thinning

For the Topping

  • 1 cup shredded cheddar cheese

Instructions

  • Preheat the oven to 350°F (175°C).
  • In a skillet over medium heat, combine the cream, chopped chipotle peppers, garlic powder, onion powder, salt, and pepper. Cook for 5–7 minutes while stirring until smooth and slightly thickened.
  • Heat a large skillet over medium-high heat. Add the ground beef and cook for 7–10 minutes until browned and fully cooked. Drain excess fat if needed.
  • Warm the tortillas for about 20 seconds to make them easier to roll.
  • Divide the cooked beef evenly among the tortillas. Roll tightly and place seam-side down in a lightly greased baking dish.
  • Pour the creamy chipotle sauce evenly over the Smothered Ground Beef Burritos.
  • Sprinkle shredded cheddar cheese generously over the top.
  • Bake for 20–25 minutes until the cheese is melted, bubbly, and lightly golden.
  • Serve immediately with your favorite toppings like cilantro, diced tomatoes, sour cream, or sliced avocado.

Notes

  • Garnish with chopped cilantro, green onions, or fresh jalapeños.
  • Serve alongside Mexican rice, refried beans, or fresh guacamole.
  • Swap cheddar for Monterey Jack or a Mexican cheese blend.
  • For extra creaminess, drizzle additional warm chipotle sauce before serving.
