Ingredients
  

  • 1½ cups cooked chickpeas or 1 (14-ounce) can, drained and rinsed
  • 1 ripe avocado pitted
  • 3 tablespoons freshly squeezed lemon juice
  • 1 large garlic clove minced
  • 1 celery rib diced
  • ¼ cup finely chopped dill pickles
  • ¼ cup finely chopped fresh dill or to taste
  • 2 green onions finely chopped
  • Pinch of fine sea salt
  • Pinch of freshly ground black pepper

For Serving

  • Whole grain bread pita bread, bagels, or tortillas
  • Lettuce or arugula
  • Mustard

Instructions
 

  • Place the drained chickpeas in a medium mixing bowl. Mash them with a potato masher or the back of a sturdy fork until most are broken down. Leave a few chickpeas partially whole for additional texture.
  • Scoop the ripe avocado into the bowl and mash it into the chickpeas until evenly distributed.
  • Add the freshly squeezed lemon juice and minced garlic.
  • Add the diced celery, chopped dill pickles, fresh dill, and green onions.
  • Season with a pinch each of sea salt and freshly ground black pepper.
  • Stir thoroughly until all the ingredients are evenly combined.
  • Taste and adjust the seasoning with additional lemon juice, salt, pepper, dill, or pickles as desired.
  • Spread mustard over slices of whole grain bread, if using.
  • Divide the Smashed Chickpea Avocado Sandwich filling between the bread slices.
  • Add lettuce or arugula and finish with the remaining bread. Serve immediately.

Notes

The smashed chickpea avocado filling can also be served inside pita bread, wrapped in a tortilla, or spread over a toasted bagel.
For a lighter option, spoon the filling into lettuce cups or serve it over mixed greens.
Mustard adds a pleasant tangy contrast, but it is optional. You can also add sliced tomatoes, cucumber, sprouts, shredded carrots, or extra pickles.
Because avocado naturally darkens after exposure to air, the filling is at its freshest and most vibrant shortly after preparation. Lemon juice helps slow this process.
