Slow Cooker Queso Beef Dip

Slow cooker queso beef dip combines ground beef, creamy cheese, salsa, jalapeño, and green chilies.
Cook everything on LOW for about 3 hours, stirring halfway through.
Serve the warm, creamy queso with tortilla chips as an easy party appetizer.

Ingredients
  

  • 1 pound ground beef
  • 32 ounces Velveeta-style processed cheese cut into cubes
  • 8 ounces cream cheese cut into cubes
  • 1 medium onion diced
  • 1 medium jalapeño seeded and diced
  • 1 cup salsa
  • 1 can 4 ounces diced green chilies
  • 1 –2 dashes hot sauce

Instructions
 

  • Brown the ground beef and diced onion in a skillet over medium heat until the beef is fully cooked and the onion is tender.
  • Drain any excess fat from the skillet and transfer the beef and onion mixture to a slow cooker.
  • Add the cubed processed cheese and cream cheese.
  • Add the diced jalapeño, salsa, green chilies, and hot sauce.
  • Stir the ingredients gently to distribute everything evenly.
  • Cover and cook on LOW for about 3 hours, stirring halfway through.
  • Once the cheese is completely melted and the dip is smooth, stir thoroughly.
  • Keep the dip warm in the slow cooker and serve with tortilla chips.
  • For the best texture, give the slow cooker queso beef dip a final stir immediately before serving.

Notes

For a milder beef queso dip, use mild salsa, omit the hot sauce, and make sure the jalapeño is completely seeded.
For extra heat, use hot salsa or increase the hot sauce gradually. A little smoked paprika or chili powder can also add additional depth of flavor.
Serve with sturdy tortilla chips, toasted pita chips, sliced bell peppers, celery sticks, or other favorite dipping vegetables.
