Slow Cooker Garlic Butter Beef Bites and Potatoes

Slow cook seasoned beef and baby potatoes with garlic, butter, and broth.Cook on low for 6–8 hours or high for 3–4 hours until tender.Add green beans near the end for an easy one-pot beef dinner.

Ingredients
  

  • 2 pounds beef stew meat
  • 1½ pounds baby potatoes
  • 1 packet onion soup mix
  • 1 teaspoon garlic powder
  • ½ teaspoon sea salt
  • ½ teaspoon ground black pepper
  • 3 garlic cloves minced
  • 4 tablespoons butter
  • ½ cup water or halal-certified beef broth
  • 1 pound green beans trimmed
  • Nonstick cooking spray

Instructions
 

  • Lightly coat the bottom and sides of a slow cooker with nonstick cooking spray.
  • Add the beef stew meat and baby potatoes to the slow cooker.
  • Sprinkle the onion soup mix, garlic powder, sea salt, and black pepper evenly over the beef and potatoes.
  • Add the minced fresh garlic and gently toss the ingredients so the seasonings are evenly distributed.
  • Cut the butter into smaller pieces and arrange them over the beef and potatoes. Pour the water or halal-certified beef broth around the ingredients.
  • Cover and cook on HIGH for 3–4 hours or LOW for 6–8 hours, until the beef is tender and the potatoes can easily be pierced with a fork.
  • For the best Slow Cooker Garlic Butter Beef Bites and Potatoes, add the trimmed green beans during the final 1–2 hours of cooking so they remain tender without becoming too soft.
  • Gently stir everything before serving. Taste and adjust the salt, pepper, or butter as desired.

Notes

Beef chuck or another well-marbled stewing cut works particularly well because slow cooking helps it become tender.
Small Yukon Gold or red potatoes can replace baby potatoes. Cut larger potatoes into evenly sized pieces before cooking.
Serve this slow cooker beef and potatoes dish as a complete meal or pair it with warm bread, a crisp garden salad, roasted vegetables, or rice.
For a little freshness, garnish individual servings with chopped parsley before serving.
