Ingredients
  

For the Orzo

  • 1 cup orzo pasta

For the Shrimp

  • 1 pound large shrimp peeled and deveined
  • 3 cloves garlic minced

For the Sauce

  • 1 cup low-sodium chicken broth
  • ¼ cup fresh lemon juice
  • Zest of 1 lemon

For Cooking

  • 2 tablespoons olive oil
  • 2 tablespoons fresh parsley chopped
  • Salt to taste
  • Freshly ground black pepper to taste

Instructions
 

  • Bring a large pot of salted water to a boil.
  • Add the orzo and cook according to the package directions until al dente.
  • Drain the orzo and set aside.
  • Heat the olive oil in a large skillet over medium heat.
  • Add the minced garlic and cook for about 1 minute until fragrant.
  • Add the shrimp in a single layer.
  • Cook for approximately 2–3 minutes per side, or until the shrimp turn pink and opaque.
  • Stir in the chicken broth, fresh lemon juice, and lemon zest.
  • Simmer for about 2 minutes to allow the flavors to blend.
  • Add the cooked orzo to the skillet and toss until evenly coated in the lemon garlic sauce.
  • Season with salt and black pepper to taste.
  • Sprinkle with freshly chopped parsley.
  • Serve the Shrimp Orzo in Lemon Garlic Sauce immediately while warm.

Notes

  • Medium shrimp may be substituted with adjusted cooking time.
  • Whole wheat orzo adds additional fiber.
  • Fresh parsley can be replaced with fresh dill or basil.
  • Pair with a crisp green salad or roasted vegetables for a complete meal.
