Sheet Pan Sausage and Veggies is an easy one-pan dinner made with roasted vegetables and halal beef smoked sausage.
Ready in about 45 minutes with minimal cleanup.
Perfect for busy weeknights and meal prep.

Ingredients
  

  • 2 cups diced baby red potatoes
  • 3 cups green beans trimmed and halved
  • 2 cups broccoli florets
  • cups chopped bell peppers
  • 13 ounces halal beef smoked sausage sliced into ½-inch rounds
  • 6 tablespoons olive oil
  • ¼ teaspoon red pepper flakes optional
  • 1 teaspoon paprika
  • ½ teaspoon garlic powder
  • 1 tablespoon dried oregano
  • 1 tablespoon dried parsley
  • Salt to taste
  • Black pepper to taste
  • Cooked rice or quinoa for serving (optional)
  • Fresh parsley for garnish (optional)
  • Freshly grated Parmesan cheese optional

Instructions
 

  • Preheat the oven to 400°F (204°C). Line a large sheet pan with parchment paper.
  • Dice the baby potatoes into small, even pieces for faster cooking.
  • Trim and halve the green beans, cut the broccoli into florets, chop the bell peppers into 1-inch pieces, and slice the beef smoked sausage into thick rounds.
  • Spread the potatoes, green beans, broccoli, peppers, and sausage evenly across the prepared sheet pan.
  • Drizzle with olive oil and sprinkle with paprika, garlic powder, oregano, parsley, red pepper flakes (if using), salt, and black pepper.
  • Toss everything together until evenly coated, then spread into a single layer without overcrowding the pan.
  • Bake for 15 minutes.
  • Remove the pan, stir the vegetables and sausage, then return to the oven for another 10–15 minutes, or until the vegetables are crisp-tender and lightly browned.
  • If desired, sprinkle with freshly grated Parmesan cheese while hot and garnish with chopped parsley.
  • Serve the Sheet Pan Sausage and Veggies over cooked rice or quinoa, or enjoy it on its own.

Notes

  • Use your favorite halal beef smoked sausage for the best flavor.
  • Sweet potatoes can be substituted for baby red potatoes.
  • Brown rice, quinoa, or cauliflower rice make excellent serving options.
  • Finish with a squeeze of fresh lemon juice for added brightness.
