Ingredients
  

For the Salmon & Asparagus

  • 4 salmon fillets 4–6 ounces each
  • 1 pound asparagus trimmed

For the Lemon Herb Marinade

  • ¼ cup olive oil
  • Juice and zest of 1 lemon
  • 1 tablespoon dried thyme
  • 1 tablespoon dried parsley
  • 3 cloves garlic mashed
  • Salt to taste
  • Black pepper to taste

Instructions
 

  • Preheat your oven to 400°F (200°C).
  • Line a large baking sheet with parchment paper.
  • Arrange the salmon fillets on one side of the baking sheet.
  • In a small bowl, whisk together the olive oil, lemon juice, lemon zest, thyme, parsley, garlic, salt, and pepper.
  • Pour most of the marinade evenly over the salmon, reserving a small amount.
  • Add the asparagus beside the salmon and drizzle with the remaining marinade. Toss gently to coat.
  • Bake the Sheet Pan Lemon Herb Salmon with Asparagus for 12–13 minutes, or until the salmon flakes easily with a fork and reaches an internal temperature of 145°F.
  • Remove from the oven and serve immediately with fresh lemon wedges if desired.

Notes

  • Serve with brown rice, quinoa, mashed potatoes, or cauliflower rice.
  • For extra flavor, sprinkle grated Parmesan over the asparagus during the last two minutes of baking.
  • Fresh dill or rosemary also pair beautifully with the lemon herb salmon.
  • Leftover salmon can be flaked into salads, wraps, or grain bowls.
