Ingredients
  

  • ¼ cup olive oil
  • 2 teaspoons salt
  • ¼ teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried oregano
  • 1 lemon zested and juiced
  • 1 pound baby potatoes halved
  • 1 red onion cut into 1-inch pieces
  • 1 red bell pepper cut into 1-inch pieces
  • 2 cups broccoli florets
  • 4 garlic cloves minced
  • 2 boneless skinless chicken breasts, cut into 1-inch cubes

Instructions
 

  • Preheat your oven to 425°F (220°C). If your oven tends to run hot, reduce the temperature to 400°F (205°C).
  • In a large mixing bowl, whisk together the olive oil, salt, pepper, garlic powder, onion powder, oregano, and lemon zest.
  • Line a large baking sheet with parchment paper.
  • Add the potatoes, onion, and bell pepper to the baking sheet. Toss with a small amount of the dressing until lightly coated.
  • Spread the vegetables into an even layer and roast for 20 minutes.
  • Add the broccoli, chicken pieces, and minced garlic to the remaining dressing. Toss until everything is evenly coated.
  • Carefully remove the baking sheet and add the chicken and broccoli alongside the roasted vegetables in a single layer.
  • Return the pan to the oven and continue roasting for another 20 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and the vegetables are beautifully caramelized.
