Sheet Pan Chicken Fajitas Recipe

Sheet Pan Chicken Fajitas are an easy one-pan Tex-Mex dinner made with juicy chicken, colorful peppers, onions, and homemade seasoning.
Ready in about 35 minutes with minimal cleanup.

Ingredients
  

For the Chicken Fajitas

  • 1½ pounds boneless skinless chicken breasts sliced into ½-inch strips
  • 3 bell peppers green, yellow, and red, sliced
  • 1 yellow onion thinly sliced
  • 2 cloves garlic minced
  • 3 tablespoons olive oil
  • 1 lime
  • ¼ cup fresh cilantro chopped
  • 8 –10 small flour tortillas
  • Sour cream
  • Sliced avocado or guacamole
  • Pico de gallo
  • Shredded cheese

Homemade Fajita Seasoning

  • 1 tablespoon chili powder
  • 1½ teaspoons paprika
  • 1½ teaspoons ground cumin
  • ½ teaspoon onion powder
  • ½ teaspoon garlic powder
  • ¼ teaspoon dried oregano
  • ¼ teaspoon cayenne pepper optional
  • 1½ teaspoons salt
  • ¾ teaspoon freshly ground black pepper

Instructions
 

  • Preheat the oven to 425°F (220°C).
  • Lightly grease a large sheet pan with non-stick cooking spray.
  • Slice the chicken, bell peppers, and onion into even strips.
  • Arrange the vegetables evenly across the pan and place the chicken on top.
  • In a small bowl, mix all the fajita seasoning ingredients until well combined.
  • Sprinkle most of the seasoning over the chicken and the remaining seasoning over the vegetables.
  • Add the minced garlic and drizzle the olive oil evenly across the pan.
  • Toss everything together until well coated, then spread into an even layer.
  • Bake the Sheet Pan Chicken Fajitas for 15–20 minutes, or until the chicken reaches an internal temperature of 165°F (74°C).
  • During the final 5 minutes, wrap the tortillas in foil and warm them in the oven.
  • Remove the pan from the oven, squeeze fresh lime juice over everything, and sprinkle with chopped cilantro.
  • Serve immediately with warm tortillas and your favorite toppings.

Notes

  • Corn tortillas can be substituted for a gluten-free option.
  • Add mushrooms or zucchini for extra vegetables.
  • Freshly squeezed lime juice provides the best flavor.
  • Prepare the seasoning in advance for even faster weeknight cooking.
