  • 1/3 cup maple syrup
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • 3/4 cup unsweetened shredded coconut
  • 3 tablespoons vanilla protein powder
  • 1/2 cup non-dairy chocolate chips

Instructions
 

  • Line a baking sheet or tray with parchment paper and set aside.
  • Wash and dry the apples thoroughly.
  • Slice each apple into even rounds, about six slices per apple.
  • Remove the core from each slice using a small knife or round cutter to create apple rings.
  • In a medium bowl, stir together the almond butter, maple syrup, and vanilla extract until smooth.
  • Add the shredded coconut, vanilla protein powder, and salt. Mix until thick and evenly combined.
  • Spoon the mixture evenly onto each apple ring, gently spreading it across the surface.
  • Arrange the prepared slices on the lined baking sheet.
