Ingredients

  • 3 cups all-purpose flour
  • 1 packet 2 1/4 teaspoons active dry yeast
  • 1 cup warm water 110°F
  • 2 tablespoons granulated sugar
  • 1 teaspoon salt
  • 3 tablespoons unsalted butter melted
  • 1/4 cup olive oil divided
  • 4 cloves garlic minced
  • 2 tablespoons fresh rosemary finely chopped
  • 1/4 teaspoon freshly ground black pepper
  • 1/2 teaspoon garlic powder optional
  • Extra fresh rosemary sprigs for garnish

Instructions

  • Add the warm water, sugar, and yeast to a large mixing bowl. Stir gently and let the mixture stand for 5–7 minutes, until foamy.
  • Add the flour, salt, and melted butter. Stir until a dough forms.
  • Transfer the dough to a lightly floured surface and knead for about 8 minutes, until smooth and elastic.
  • Place the dough in a lightly greased bowl. Cover with a clean towel and let it rise in a warm place for about 1 hour, or until doubled in size.
  • Preheat the oven to 375°F. Grease a 9-inch round cake pan or similar baking dish.
  • Roll the dough into approximately a 12 × 16-inch rectangle.
  • Brush the dough with 2 tablespoons of olive oil.
  • In a small bowl, combine the minced garlic, chopped rosemary, black pepper, garlic powder if using, and remaining olive oil.
  • Spread the garlic-rosemary mixture evenly over the dough.
  • Cut the dough into 12 equal squares. Stack the squares, then cut the stack into 3 equal strips.
  • Arrange the strips vertically in the prepared pan, allowing the pieces to overlap slightly to create the pull-apart effect.
  • Cover loosely with plastic wrap and let the dough rise in the pan for another 20 minutes.
  • Bake for 25–30 minutes, or until golden brown and cooked through.
  • Let the bread cool for 10 minutes. Garnish with fresh rosemary sprigs and serve warm.

Notes

For an especially fragrant loaf, use freshly chopped rosemary and freshly minced garlic. You can substitute part of the all-purpose flour with bread flour for a slightly chewier texture.
Serve the bread warm with creamy soups, tomato pasta, roasted vegetables, grilled chicken, or a fresh green salad. It also makes a lovely addition to a holiday or family dinner table.
