Roasted Eggplant Gyros Bowl (Easy Sheet Pan Recipe)

Roasted Eggplant Gyros Bowl is an easy Mediterranean sheet pan dinner made with roasted eggplant, chickpeas, quinoa, feta, and a flavorful gyros-style marinade.

Ingredients
  

Gyros-Style Marinade

  • ¼ cup extra virgin olive oil
  • 2 tablespoons red wine vinegar or your favorite vinegar
  • 2 garlic cloves grated
  • 2 tablespoons tomato paste
  • 1 tablespoon honey
  • 2 teaspoons dried oregano
  • 2 teaspoons smoked paprika
  • 1 teaspoon ground cumin
  • 1 teaspoon salt
  • Freshly ground black pepper

Bowl

  • 2 eggplants about 1½ pounds / 700 g, cut into 1½-inch chunks
  • 1 15-ounce / 400 g can chickpeas, drained and rinsed
  • 2 red onions cut into wedges
  • 1½ cups cooked quinoa or cooked orzo, farro, or brown rice
  • 1 cup crumbled feta cheese
  • Juice of ½ lemon

Optional Toppings

  • Greek yogurt
  • Tzatziki
  • Fresh parsley
  • Fresh dill
  • Sliced cucumber
  • Kalamata olives

Instructions
 

  • Preheat the oven to 400°F (200°C).
  • In a large mixing bowl, whisk together the olive oil, red wine vinegar, garlic, tomato paste, honey, oregano, smoked paprika, cumin, salt, and black pepper until smooth.
  • Add the eggplant, chickpeas, and red onion. Toss until every piece is evenly coated with the marinade.
  • Spread everything onto a large sheet pan in a single layer.
  • Roast for about 30 minutes, stirring halfway if desired, until the vegetables are tender and beautifully caramelized.
  • Remove the pan from the oven. Add the cooked quinoa, crumbled feta, and lemon juice directly to the hot pan.
  • Gently toss everything together, scraping up the flavorful caramelized bits from the pan. This gives the Roasted Eggplant Gyros Bowl even more depth of flavor.
  • Divide into serving bowls and garnish with Greek yogurt, tzatziki, parsley, or your favorite Mediterranean toppings before serving.

Notes

  • This vegetarian gyros bowl tastes wonderful warm or at room temperature.
  • Fresh lemon juice added after roasting brightens the entire dish.
  • If serving for meal prep, keep the yogurt or tzatziki separate until ready to eat.
  • Add extra chickpeas for additional protein.
