Ingredients

  • 2 15-ounce cans chickpeas
  • 1 tablespoon olive oil
  • 1 tablespoon ground sumac
  • 2 teaspoons smoked paprika
  • 1 teaspoon garlic powder
  • ½ teaspoon fine sea salt
  • ¼ teaspoon black pepper

Instructions

  • Preheat your oven to 350°F (175°C). Line a large baking sheet with parchment paper.
  • Rinse the chickpeas thoroughly until the water runs clear. Drain well.
  • Spread the chickpeas on a clean kitchen towel and pat them completely dry. Remove any loose skins.
  • Transfer the chickpeas to a large mixing bowl.
  • Add the olive oil, sumac, smoked paprika, garlic powder, salt, and black pepper.
  • Toss until every chickpea is evenly coated with the seasoning.
  • Spread them into a single layer on the prepared baking sheet.
  • Bake the Roasted Chickpeas for 45 minutes, shaking the pan after 15 and 30 minutes for even crispiness.
  • Remove from the oven and allow them to cool for several minutes. They will become even crispier as they cool.
  • Enjoy immediately or store properly for later.

Notes

  • Sumac adds a tangy citrus flavor that pairs beautifully with smoked paprika.
  • Serve these crunchy chickpeas over salads for extra texture.
  • They're also delicious inside wraps or grain bowls.
  • Feel free to customize the seasoning using your favorite spice blends.
