Ingredients
  

For the Pineapple Turkey Tacos

  • 1 tablespoon avocado oil
  • ½ medium yellow onion chopped
  • ½ tablespoon minced garlic
  • 1 pound lean ground turkey 97% lean
  • 1 tablespoon taco seasoning
  • cup diced pineapple
  • ½ cup jarred salsa
  • Taco shells of choice

For Serving

  • Sliced red cabbage
  • Diced red bell pepper
  • Shredded lettuce
  • Sliced avocado
  • Fresh cilantro
  • Fresh lime juice

Instructions
 

  • Heat avocado oil in a large skillet over medium heat.
  • Add chopped onion and minced garlic. Cook for 3–4 minutes until softened and fragrant.
  • Add ground turkey and taco seasoning. Cook while breaking apart the meat until almost fully browned.
  • Stir in diced pineapple and salsa. Simmer for 4–5 minutes until the turkey is fully cooked and flavors combine beautifully.
  • Warm taco shells according to package directions.
  • Fill taco shells with the Pineapple Turkey Tacos mixture.
  • Top with red cabbage, diced bell pepper, lettuce, avocado slices, cilantro, and fresh lime juice before serving.

Notes

  • Swap ground turkey with ground chicken if preferred.
  • Add black beans or corn for extra texture.
  • Serve with cilantro lime rice or a fresh salad.
  • Soft tortillas work just as well as crunchy taco shells.
