Peach Salad with Honey Vinaigrette is a fresh summer salad made with peaches, blueberries, avocado, feta, pecans, and spring mix.

Ingredients
  

  • 6 cups spring mix lettuce
  • 3 peaches sliced
  • 1 cup blueberries
  • 1 avocado sliced
  • ½ small red onion thinly sliced
  • ½ cup crumbled feta
  • ½ cup chopped pecans

Honey Vinaigrette

  • ½ cup olive oil
  • ⅓ cup honey
  • 2 tablespoons apple cider vinegar
  • 2 tablespoons lemon juice
  • 1 teaspoon Dijon mustard
  • ½ teaspoon salt

Instructions
 

  • Add the spring mix lettuce, sliced peaches, blueberries, avocado, red onion, crumbled feta, and chopped pecans to a large serving bowl.
  • In a small bowl or jar, combine the olive oil, honey, apple cider vinegar, lemon juice, Dijon mustard, and salt.
  • Whisk the dressing until the ingredients are fully combined and the vinaigrette looks slightly thickened and emulsified.
  • Drizzle the desired amount of honey vinaigrette over the salad.
  • Gently toss until the ingredients are evenly coated. Serve immediately.

Notes

For the freshest presentation, assemble the salad just before serving. If preparing it ahead, keep the dressing, avocado, and pecans separate and combine everything shortly before eating.
This salad works beautifully as a side dish alongside grilled chicken, fish, sandwiches, wraps, or other summer favorites. It can also be served as a light lunch with an added protein.
