Ingredients
  

  • 1 lb medium carrots sliced into ½-inch rounds
  • 1 tablespoon olive oil
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon Italian seasoning
  • ½ teaspoon paprika
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ¾ cup finely grated Parmesan cheese divided
  • 1 tablespoon hot honey optional

Instructions
 

  • Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
  • Place sliced carrots in a bowl.
  • Add olive oil, garlic powder, onion powder, Italian seasoning, paprika, salt, pepper, and ¼ cup Parmesan. Toss well.
  • Spread remaining Parmesan onto the baking sheet. Arrange carrots over the cheese in a single layer without overlapping.
  • Roast for 20–25 minutes until tender and golden.
  • Let cool slightly, then flip to reveal the crispy crust. Drizzle with hot honey if desired.
