Preheat your oven to 400°F (200°C).
In a blender, combine eggs, milk, flour, salt, and vanilla. Blend on high for 3–5 minutes until smooth and airy.
Add about 1/2 teaspoon of melted butter into each muffin tin cavity.
Pour the batter evenly into each cavity.
Bake for 12–15 minutes until the Pancake Poppers are puffed and golden brown.
Serve immediately with fruit, syrup, and powdered sugar.
