Pancake Poppers Recipe Easy Mini Pancakes

Pancake Poppers are fluffy mini pancakes baked in a muffin tin.
They are quick, easy, and perfect for breakfast or brunch.

Ingredients
  

  • 6 eggs
  • 1 cup milk
  • 1 cup flour
  • 1 teaspoon salt
  • 1 teaspoon vanilla
  • 1/2 cup melted butter divided
  • Fresh fruit for serving
  • Syrup
  • Powdered sugar
  • Optional toppings of choice

Instructions
 

  • Preheat your oven to 400°F (200°C).
  • In a blender, combine eggs, milk, flour, salt, and vanilla. Blend on high for 3–5 minutes until smooth and airy.
  • Add about 1/2 teaspoon of melted butter into each muffin tin cavity.
  • Pour the batter evenly into each cavity.
  • Bake for 12–15 minutes until the Pancake Poppers are puffed and golden brown.
  • Serve immediately with fruit, syrup, and powdered sugar.

Notes

  • Substitute milk with almond or oat milk if desired.
  • Serve with yogurt for added protein.
  • Add cinnamon for a warm flavor twist.
