Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
In a bowl, mix feta cheese, dill, and garlic until combined.
Place one sheet of phyllo dough on a clean surface and fold in half crosswise. Brush lightly with olive oil.
Add 1 tablespoon of filling to one end. Roll tightly, folding in the sides to seal (burrito style).
Place seam-side down on the baking sheet. Repeat to form 12–16 rolls.
Brush tops with olive oil and bake for 20 minutes until golden and crisp.
In a skillet, melt butter with olive oil, chili flakes, and cumin seeds. Cook for 1–2 minutes until fragrant.
Remove from heat and stir in honey.
Serve the oven fried feta rolls warm with chili honey for dipping or drizzling.
