One Pot Lemon Herb Chicken and Rice is an easy weeknight dinner made with juicy seasoned chicken, fluffy rice, fresh lemon, and Italian herbs.

Ingredients
  

Chicken

  • 4 boneless skinless chicken breasts
  • 2 tablespoons butter
  • Salt to taste
  • Black pepper to taste
  • 2 teaspoons Italian seasoning

Rice

  • 1 cup uncooked white rice
  • 2¼ cups low-sodium chicken broth
  • Juice of 1 fresh lemon
  • 1 teaspoon Italian seasoning

Optional Garnish

  • Fresh parsley chopped
  • Fresh cilantro chopped
  • Lemon wedges

Instructions
 

  • Melt the butter in a large skillet or deep pan with a lid over medium heat.
  • Season the chicken breasts with salt, pepper, and 2 teaspoons Italian seasoning.
  • Sear the chicken for 1–2 minutes per side until lightly golden. The chicken does not need to be fully cooked.
  • Transfer the chicken to a plate.
  • Add the uncooked rice, chicken broth, lemon juice, and remaining Italian seasoning to the same pan without cleaning it.
  • Stir gently to combine.
  • Return the chicken to the pan, placing it on top of the rice.
  • Cover with a lid and reduce the heat to medium-low.
  • Simmer for 20–25 minutes until the rice is tender, the liquid is absorbed, and the One Pot Lemon Herb Chicken and Rice is fully cooked.
  • Garnish with chopped parsley or cilantro and serve with fresh lemon wedges.
