Ingredients
  

  • 1 1/2 pounds gold potatoes cut into 1 1/2-inch pieces
  • 1 pound fresh green beans cut into 2-inch pieces
  • 2 tablespoons olive oil
  • 1 1/2 teaspoons kosher salt divided
  • 3/4 teaspoon ground black pepper divided
  • 6 bone-in skin-on chicken thighs
  • 2/3 cup parmesan garlic sauce

Instructions
 

  • Preheat the oven to 375°F (190°C).
  • In a large bowl, combine the potatoes and green beans with olive oil, 1 teaspoon kosher salt, and 1/2 teaspoon black pepper.
  • Spread the vegetables evenly into a 9x13-inch baking dish.
  • Arrange the chicken thighs on top of the vegetables.
  • Season the chicken with the remaining salt and pepper.
  • Spread approximately 1 tablespoon of parmesan garlic sauce over each chicken thigh. Drizzle the remaining sauce over the vegetables.
  • Bake the One Pan Garlic Parmesan Chicken Dinner uncovered for 50 to 60 minutes.
  • Halfway through baking, rotate the pan and gently stir any vegetables that are not coated in sauce.
  • Continue baking until the chicken reaches an internal temperature of 165°F (74°C) and the skin is beautifully golden.
  • Let the dish rest for 5 minutes before serving.

Notes

  • Boneless chicken thighs may be substituted but will require less cooking time.
  • Baby potatoes work well without peeling.
  • Serve with crusty bread, rice, or a fresh garden salad.
  • Leftovers taste even better the next day.
