Preheat the oven to 350°F (175°C). Grease a 9x5-inch loaf pan or line it with parchment paper.
In a large mixing bowl, mash the bananas until mostly smooth with a few small lumps remaining.
Stir in the melted coconut oil (or butter).
Add the honey or maple syrup, eggs, Greek yogurt, and vanilla extract. Mix until smooth.
In a small bowl, whisk together the flour, baking soda, salt, and cinnamon.
Add the dry ingredients to the wet ingredients and gently fold until just combined. Avoid overmixing.
The batter should be thick and slightly lumpy. This texture helps create the perfect One Bowl Banana Bread.
Fold in chocolate chips, nuts, or seeds if using.
Pour the batter into the prepared loaf pan and smooth the top.
Sprinkle extra chocolate chips or chopped nuts over the surface if desired.
Bake for 55–65 minutes, or until a toothpick inserted into the center comes out clean or with just a few moist crumbs.
Cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
