For the Crust
- 3½ cups graham cracker crumbs
- ⅔ cup unsalted butter melted

- 2 tablespoons sugar

- 2⅕ cups cream cheese room temperature
- ½ cup sugar
- 1 teaspoon pure vanilla extract
- 1 cup heavy whipping cream

Prepare the Crust
Crush the graham crackers into fine crumbs using a food processor.
Combine the crumbs with melted butter in a mixing bowl.
Mix until the crumbs are evenly coated.
Press the mixture firmly into the bottom of a 9-inch springform pan.
Refrigerate while preparing the filling.
Make the Strawberry Purée
Prepare the Cheesecake Filling
In a large mixing bowl, beat the cream cheese until smooth and fluffy.
Add the sugar and vanilla extract.
Mix until fully incorporated.
Slowly pour in the heavy whipping cream while mixing.
Continue beating until smooth and creamy.
Fold the strawberry purée into the cheesecake mixture.
Mix gently until evenly combined and pink in color.
Assemble the Cheesecake
Remove the crust from the refrigerator.
Pour the cheesecake filling over the crust.
Smooth the top with a spatula.
Cover and refrigerate for at least 4–6 hours, preferably overnight.
Serve
Once fully set, remove the cheesecake from the springform pan.
Top with fresh strawberries, strawberry sauce, or whipped cream.
Slice and serve chilled.
