No Bake Pumpkin Cheesecake Lasagna

No Bake Pumpkin Cheesecake Lasagna is a creamy layered pumpkin dessert made with graham crackers, cheesecake filling, caramel, and toffee.
Layer the ingredients in an 11 x 7-inch pan, then freeze for at least 4 hours.
Thaw slightly before slicing and serve with whipped cream and extra toffee bits.

Ingredients
  

  • 12 whole cinnamon graham crackers
  • 24 oz cream cheese room temperature
  • 1 cup canned pumpkin
  • 1 1/2 teaspoons cinnamon divided
  • 2 teaspoons vanilla extract
  • 1 package instant vanilla pudding mix
  • 2/3 cup caramel sundae sauce divided
  • 1/4 cup toffee bits
  • 16 oz whipped topping such as Cool Whip, divided
  • 1 can sweetened condensed milk
  • 1/4 cup pure maple syrup
  • Whipped cream for serving
  • Additional toffee bits for serving

Instructions
 

  • In a large mixing bowl, beat the softened cream cheese, pumpkin, sweetened condensed milk, vanilla, and 1 teaspoon of cinnamon until smooth and creamy.
  • In a separate bowl, stir together the instant vanilla pudding mix, maple syrup, whipped topping, and remaining 1/2 teaspoon cinnamon until evenly combined.
  • Arrange 6 cinnamon graham crackers in a single layer on the bottom of an 11 x 7-inch baking pan.
  • Spread half of the pumpkin cheesecake mixture evenly over the graham crackers.
  • Add the remaining 6 graham crackers in a second layer.
  • Drizzle 1/3 cup of caramel sauce evenly over the graham cracker layer.
  • Spread the remaining pumpkin cheesecake mixture over the crackers and caramel.
  • Spread the pudding and whipped topping mixture evenly over the cheesecake layer.
  • Drizzle the remaining 1/3 cup caramel sauce over the top and sprinkle with toffee bits.
  • Cover and freeze for at least 4 hours, or until firm.
  • Let the dessert thaw slightly before cutting if it is too firm to slice.
  • Before serving, add a dollop of whipped cream and a sprinkle of additional toffee bits.

Notes

For a slightly different flavor, try adding a pinch of nutmeg or pumpkin pie spice to the cheesecake mixture.
You can also replace the cinnamon graham crackers with regular graham crackers if preferred. For serving, add whipped cream, extra caramel sauce, or a few more toffee bits for an indulgent finish.
