No Bake Greek Yogurt Fruit Tart

A no bake fruit tart with a nut and date crust.
Filled with creamy Greek yogurt and fresh fruit.
Ready in just 20 minutes and naturally sweetened.

Ingredients
  

  • 15 pitted Medjool dates about 230g, soaked
  • 3/4 cup 100g unsalted cashews
  • 3/4 cup 100g unsalted almonds
  • 1 cup 250g Greek yogurt (plain or flavored)
  • Assorted sliced fresh fruit
  • Optional: 2 tablespoons apricot preserves + 1 tablespoon water

Instructions
 

  • Prepare a 9-inch tart pan by spraying with nonstick spray and lining with parchment paper.
  • Soak dates in warm water for 10 minutes, drain, and halve.
  • Blend dates, cashews, and almonds in a food processor until a sticky dough forms.
  • Press the mixture evenly into the pan and slightly up the sides to form the crust.
  • Spread Greek yogurt over the crust evenly.
  • Arrange fresh fruit on top as desired.
  • (Optional) Brush fruit with apricot glaze for shine.
  • Chill or serve immediately. This No Bake Greek Yogurt Fruit Tart is best enjoyed fresh.
