Ingredients

  • ¼ cup raw almonds
  • ¾ cup old-fashioned rolled oats
  • 2 tablespoons ground flaxseed
  • 2 –3 tablespoons cocoa powder
  • 10 ounces Medjool dates pitted
  • 1 –2 tablespoons coconut oil melted

Instructions

  • Place the raw almonds in a food processor and pulse until finely chopped.
  • Add the rolled oats, ground flaxseed, and cocoa powder. Pulse until everything is evenly combined.
  • Add the Medjool dates and process for about 30 seconds, or until the mixture becomes crumbly and starts to stick together.
  • Drizzle in 1 tablespoon of melted coconut oil and pulse again until the mixture becomes sticky enough to hold its shape.
  • If the mixture still feels dry or crumbly, add the remaining coconut oil and pulse until fully combined.
  • Scoop small portions and roll into approximately 24 one-inch balls.
  • Arrange the No Bake Chocolate Energy Balls on a tray or baking dish.
  • Refrigerate for 20 minutes or until firm.
  • Serve immediately or store for later.

Notes

  • Unsweetened cocoa powder provides the richest chocolate flavor.
  • Natural almond butter can be added for extra creaminess.
  • These energy bites pair well with coffee, tea, or smoothies.
  • For a festive touch, roll the balls in cocoa powder, shredded coconut, or finely chopped nuts before chilling.
