Mocha Coffee Cake Recipe with Chocolate Streusel

Ingredients
  

For the Cake

  • 1 ¾ cups all-purpose flour
  • 1 cup granulated sugar
  • ½ cup unsalted butter softened
  • 2 large eggs
  • ½ cup sour cream or plain Greek yogurt
  • ¼ cup brewed coffee cooled
  • 1 ½ teaspoons baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 teaspoon vanilla extract

For the Chocolate Streusel Topping

  • ½ cup all-purpose flour
  • ½ cup packed light brown sugar
  • 2 teaspoons ground cinnamon
  • 3 tablespoons unsweetened cocoa powder
  • ¼ cup unsalted butter cold and cubed

For the Coffee Glaze

  • 1 cup powdered sugar
  • 2 tablespoons brewed coffee cooled

Instructions
 

  • Step 1: Prepare the Oven and Baking Pan
  • Preheat your oven to 350°F (175°C).
  • Grease a 9-inch round cake pan or an 8-inch square baking pan with butter or nonstick cooking spray.
  • Line the bottom with parchment paper if you want to make removing the cake easier.
  • Step 2: Make the Chocolate Streusel
  • In a medium mixing bowl, combine the flour, brown sugar, cinnamon, and cocoa powder.
  • Add the cold, cubed butter.
  • Using a pastry cutter, fork, or your fingertips, work the butter into the dry ingredients until the mixture resembles coarse crumbs.
  • Some larger buttery pieces are perfectly fine. They will create delicious pockets of streusel as the cake bakes.
  • Place the topping in the refrigerator while you prepare the cake batter.
  • Step 3: Combine the Dry Ingredients
  • In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.
  • Mix until evenly combined, then set aside.
  • Step 4: Cream the Butter and Sugar
  • In a large mixing bowl, beat the softened butter and granulated sugar using an electric mixer.
  • Continue mixing for approximately 2–3 minutes, until the mixture becomes light and fluffy.

  • Add the eggs one at a time, beating well after each addition.

  • Mix in the sour cream and cooled brewed coffee.
  • The mixture may look slightly separated at this stage, which is normal.
  • Continue mixing just until the ingredients are combined.
  • Step 7: Incorporate the Dry Ingredients
  • Gradually add the flour mixture to the wet ingredients.
  • Mix on low speed or fold gently with a spatula until no visible streaks of flour remain.
  • Avoid overmixing, as this can make the finished cake dense rather than soft and fluffy.
  • Step 8: Assemble the Cake
  • Transfer the batter to the prepared baking pan.
  • Spread it evenly using a spatula.
  • Remove the chocolate streusel from the refrigerator and sprinkle it evenly over the batter.
  • Gently press a few larger crumbs into the surface so the topping stays in place.
  • Step 9: Bake the Cake
  • Bake for approximately 35–45 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs.
  • If the topping begins to brown too quickly, loosely cover the pan with aluminum foil during the final minutes of baking.
  • Allow the cake to cool in the pan for approximately 15 minutes before transferring it to a wire rack.
  • Step 10: Prepare the Coffee Glaze
  • In a small bowl, whisk the powdered sugar with the cooled brewed coffee.
  • Continue mixing until smooth.
  • If the glaze is too thick, add a little more coffee, one teaspoon at a time.
  • If it becomes too thin, add a small amount of powdered sugar until it reaches your preferred consistency.
  • Step 11: Glaze and Serve
  • Once the cake has cooled completely, drizzle the coffee glaze over the chocolate streusel.

Notes
