Mini Quiche Recipe

Easy Mini Quiche Recipe made with flaky pastry and creamy egg filling.

Ingredients
  

Pastry

  • 3 sheets shortcrust pastry thawed
  • Cooking spray

Quiche Filling

  • 3 eggs
  • 2/3 cup heavy cream
  • 1/2 teaspoon salt
  • Pinch black pepper

Turkey Ham & Cheese Filling

  • 2 teaspoons butter
  • 150 g turkey ham finely chopped
  • 1/2 shallot finely diced
  • 1/3 cup Swiss or Gruyère cheese shredded

Spinach & Cheese Filling

  • 1 tablespoon butter
  • 120 g baby spinach sliced
  • 1 garlic clove minced
  • 1/2 cup Swiss or Gruyère cheese shredded

Mushroom Filling

  • 1 tablespoon butter
  • 1 garlic clove minced
  • 100 g mushrooms finely chopped
  • 8 small mushrooms sliced
  • 1/2 cup Swiss or Gruyère cheese shredded
  • 1 tablespoon chopped chives

Mediterranean Filling

  • 1/4 cup green olives finely chopped
  • 1/4 cup sun-dried tomatoes finely chopped
  • 30 g feta cheese crumbled
  • 1/4 cup Swiss or Gruyère cheese shredded

Instructions
 

Prepare the Crust

  • Preheat oven to 180°C (350°F) or 160°C fan-forced.
  • Lightly spray two standard muffin tins with cooking spray.
  • Cut 24 pastry rounds using a 7.5–8cm cutter.
  • Press pastry rounds into muffin cups.
  • Prick each pastry base four times with a fork.
  • Bake for 4–5 minutes until a light skin forms on the surface.
  • Remove and allow to cool slightly.

Prepare the Egg Mixture

  • In a bowl, whisk together eggs, cream, salt, and black pepper.
  • Set aside until ready to use.

Turkey Ham & Cheese Mini Quiche

  • Melt butter in a skillet over medium heat.
  • Cook turkey ham for 2 minutes.
  • Add shallots and cook until lightly golden.
  • Add a small pinch of cheese to each crust.
  • Top with 1 teaspoon turkey ham mixture.
  • Fill with approximately 1 tablespoon egg mixture.

Spinach & Cheese Mini Quiche

  • Melt butter in a skillet.
  • Add garlic and sauté for 20 seconds.
  • Add spinach and cook until wilted.
  • Add cheese to each crust.
  • Top with spinach mixture.
  • Fill with egg mixture.

Mushroom Mini Quiche

  • Melt butter and sauté garlic.
  • Add chopped mushrooms and cook until lightly golden.
  • Place cheese in each crust.
  • Add cooked mushrooms.
  • Fill with egg mixture.
  • Decorate with mushroom slices.
  • Mediterranean Mini Quiche
  • Combine olives, sun-dried tomatoes, and feta cheese.
  • Place cheese into each pastry shell.
  • Add a teaspoon of Mediterranean filling.
  • Top with egg mixture.

Bake

  • Bake all Mini Quiche Recipe variations for 20 minutes.
  • Bake until puffed and lightly golden.
  • Allow to cool slightly before serving.
  • Garnish mushroom quiches with chopped chives.

Notes
