Pat the chicken dry and season with salt, pepper, oregano, and paprika.
Heat 1 tablespoon olive oil in a large skillet over medium-high heat.
Sear the chicken for 3–4 minutes per side until golden. Remove and set aside.
Add the remaining olive oil to the skillet.
Sauté the onion for about 2 minutes until softened.
Stir in the garlic and cook for another 30 seconds.
Pour in the chicken broth while scraping the browned bits from the bottom of the pan.
Add the remaining broth, lemon juice, lemon zest, Dijon mustard, and red pepper flakes. Stir well.
Return the chicken to the skillet, nestling it into the sauce.
Add the artichokes, olives, and capers around the chicken.
Cover and simmer over medium-low heat for 10–15 minutes, or until the chicken reaches an internal temperature of 165°F (75°C).
Garnish with fresh parsley or basil and lemon slices before serving.
